I love muffins. Yes, I must admit it right off the bat.
Years ago, prior to moving to the west coast of Canada, I stayed well clear of the kitchen as I didn’t have a clue about baking. However, once I saw how easy baking or cooking could be I decided to try it. I am still amazed that Irma is still with me. I told you, she is fantastic.
I made this apple muffin recipe yesterday and they are perfect. Just the right moisture and the taste is lip-smacking good. In fact, I thought they may have too much moisture but not so. They sat out on the kitchen counter overnight. They were covered with a cloth.
This morning I popped one in the microwave for 10 seconds and WOW! PERFECT!
I try to make muffins that are healthy but tasty to eat.
Apple Muffin Recipe
1 cup white flour
1 cup whole wheat flour
I cup Super grains (see below)
½ cup white sugar
1 tsp baking soda
1 tsp baking powder
1 cup oil
1 tsp vanilla
1 1/2 apples peeled and chopped up
1 cup unsweetened applesauce
½ cup honey
Sift all of the dry stuff well. Mix the wet stuff all together and dump it into the bowl with the dry stuff. Mix it all together well.
Heat the oven to 375. Oil the muffin pan and spoon in the ingredients. I prefer larger muffins so I put in ingredients until they are just about even and the holes are full. This recipe makes 15 muffins or more if you want smaller ones.
When the oven is ready, place the trays inside and set the timer at 24 minutes.
I looked in the oven after 10 minutes and I thought, OH NO because It looked like I had a tray of donuts in the oven. After 24 minutes though they were perfect!
Super Grains — I found this at Walmart while I looked for Oat Bran which I would normally use and they didn’t have any. The ingredients were looking great: Oats, Barley, Rye, Flax and Quinoa. Our daughter, Sandra, loves Quinoa as it is very high in fibre, a good source of omega-3, and this mixture has apples and cinnamon. Inside the box there are 6 packets. I used 2 packets and it equaled a cup.
This apple muffin recipe also had some cinnamon in it as it is one of the ingredients of the Super Grains.
